Dairy-Free Creamy Caesar Salad

Having a child with a dairy allergy can find itself to be very challenging at times. Especially if you want to be creative in your cooking. I was looking for a good caesar salad recipe the other day and came across this Creamy Caesar Salad recipe from Cooking Light. I thought I would try it by replacing the yogurt with soy yogurt. It was so wonderful. I even took it to a potluck dinner the other night and had many people asking me to email them the recipe. It is better on the figure than most caesar salad recipes too.

Ingredients
1/3 cup plain fat-free yogurt (I replaced this with plain soy yogurt)
2 tablespoons fresh lemon juice
1 tablespoon olive oil
2 teaspoons red wine vinegar
2 teaspoons Worcestershire sauce
1 teaspoon anchovy paste
1 teaspoon Dijon mustard
1/2 teaspoon freshly ground pepper
1 garlic clove, minced

Preparation: Combine all ingredients in a bowl; stir well with a whisk.

Yield
1/2 cup (serving size: 1 tablespoon)
